Sprouted wheat cookies(vegan)

1 cup(250gm)of sprouted wheat
1/2cup of sugar(muscovado or molasses)
1/2cup brown sugar
1 tsp baking soda,mixed with 1tbsp of lemon juice
1 tsp of lemon jest
1tsp of clove powder
1/2 cup of walnut oil
1 cup of chopped almonds or walnuts
vanilla(optional)
1 cup of soya lecithin mixture(combine 1 tsp of soya lecithin granules with 1 cup of warm water and leave overnight to dissolve)
You may need to add some extra spelt flower to make a sour cream-like dough(butter).
Put sprouted wheat in food processor and blend well until it looks like a dough.Put it in a bowl,add all the ingredients and mix well.Place teaspoons of the mixture well apart on greased baking sheets and bake in preheated moderate oven-160 C(325F)for 15-20 min.until golden brown.Leave to cool for 2-3 min.and transfer to a wire rack to cool completely.
